Right up front, it is because you inherited (just like the rest of us) an outdated model human body operating system, not at all designed to handle high blood sugar peaks.
For two million years, your ancestors contributing to this body design, only ate food that was 15% sugar content max and 85% fiber average, taking hours of digestion to get that little bit of sugar in the blood stream.

Even your great grandmother served dinner mixed (blended) with a lot of slow digesting fat, meat and fiber. Reserving anything high sweet or sugar content for last.

They called it "desert".

Worst thing of all , it is not even sugar, it is fake man made sugar called high fructose corn syrup that is not handled by your body like regular sugar, and is now replaced real sugar in almost all American pop. (real sugar still in Mexican pop)

The average American is now consuming a reported 88 pounds per year of this stuff.
The US Department of Agricultures own studies show this stuff never should have been approved for human consumption.
